Damson Plum Ricotta Tart

  • 400g short crusty (1 pre-rolled sheet)
  • 500g ricotta (normal or light)
  • 1/3 cup sugar
  • 2 eggs
  • Zest of one lemon
  • 1 jar of Damson Plum Jam



This recipe is super quick and tastes amazing! If you are a keen cook then you can make your own short crust pastry but for those with busy lives using ready-made pastry means prep time is only 5 minutes.

    Roll pastry to fit 20cm round pie tin, trim excess

    In a bowl, combine the ricotta, sugar, eggs and zest.

    Take the lid off the Damson Plum Jam and heat in microwave for 1 minute, or until runny-ish

    Pour ricotta mixture into pie tin, spoon Damson Plum Jam over this mixture

    Bake in oven, on lowest shelf, at 180C for 45-50 minutes.
