2 tbsp Vegetable Oil
500g beef blade or skirt steak
A selection of green vegetables - I used Broccoli, Bok Choy
Brussel Sprouts and Spinach
Damson Plum Sauce
Noodles and fried Shallots to serve (optional)
Cook noodles as per pack instructions.
Heat oil in large frypan and slice steak into strips. Flash fry steak on a fairly high heat to sear, you may have to do this in batches depending on the size of your pan. Remove to a bowl and keep warm.
Roughly chop your chosen vegetables (omit spinach at this stage if using) and add to the pan. Add a few tablespoons of water and place lid on pan.
Once cooked al dente, throw in the reserved meat and any juices, chopped spinach, peanuts, and add Damson Plum Sauce. Cook for a further 5 minutes. Serve over noodles and sprinkled with fried shallots.
