Damson Plum Pancakes


1 cup standard plain flour
1/8 teaspoon salt
1 egg
3/4 cup milk
Damson Plum Coulis


Sift flour and salt into a bowl. Add egg, mixing to combine.  Gradually beat in milk, mixing to a smooth batter,  Chill for 1 hour. Stir. The batter will thicken on standing.  Add a little water if necessary to bring it back to the original consistency.

Heat a greased pan and pour just enough batter to cover the base of the pan. Cook until light brown. Serve with Damson Plum Coulis and Banana.
